Project Overview


Ciabatta (pronounced chuh-BAH-tah) is a traditional Italian bread, whose name quite literally translates into slipper bread, though “not an elegant slipper, but the kind of old slipper you slouch around in.” Leavened with baker’s yeast and a 15 hour poolish starter, ciabatta is a light and airy bread with a heavily floured durable crust.  It is without a doubt our most popular bread, and has been so since the beginning. We hear all too often (and much to our delight) that once the kids get ahold of a loaf, it isn’t long for this world.  Our ciabatta can be seen cradling many of the best burgers in Bozeman, and it does a great job.  The outer crust envelops even the juiciest burger, and the soft and salty crumb soaks it all up.
