Ciabatta (pronounced chuh-BAH-tah
) is a traditional Italian bread, whose name quite literally translates into slipper bread
, though “not an elegant slipper, but the kind of old slipper you slouch around in.” Leavened with baker’s yeast and a 15 hour poolish starter, ciabatta is a light and airy bread with a heavily floured durable crust. It is without a doubt our most popular bread, and has been so since the beginning. We hear all too often (and much to our delight) that once the kids get ahold of a loaf, it isn’t long for this world. Our ciabatta can be seen cradling many of the best burgers in Bozeman, and it does a great job. The outer crust envelops even the juiciest burger, and the soft and salty crumb soaks it all up.
