Pane Pugliese (or as we lovingly refer to it as, pug
) is an Italian country loaf that is light and airy inside, but crackly and crunchy outside. If you ever stop by the bakery looking for a loaf of pug, don’t be surprised if we don’t have any; it’s the favorite bread of nearly all our bakers, and they’ll snag an extra loaf whenever possible. We’re not really sure what makes this one so special, but maybe it’s the long fermentation it undergoes, which, along with its high hydration, contribute to the big and open crumb structure. This bread is especially good served alongside a fine steak or lamb chop.
